Try this recipe, except use salmon instead of tuna.

It's one of my favorite. The Walmart salmon tastes soooo good cooked this way. Also, use low-fat mayo.

A toaster oven is something good to invest in because it is cheap enough and can be used to cook your salmon. In the future when you have a working fullsize oven you can still use the toaster oven to cook other items at different temperatures than what you have in the fullsize oven. Or you can use it instead of heating up your whole kitchen with the larger oven. Otherwise I like Hyphen Mama's suggestion - Foreman grills are great too!

Oh man! A year ago we were completely without a range while we remodeled our kitchen and we lived DAILY using our GeorgeForeman (knock off) grill. I wouldn't even know where to begin, trying to not destroy salmon cooking it on the stovetop. But witchypoo's suggestion sounds super yummy!

Try cooking it in melted butter (a good amount). Keep the heat low, and put a lid on it. This way it will also steam. If you use a good amount of butter it won't absorb enough to stick. You may also try removing the skin first, in my experience with salmon its generally the skin that likes to stick.

Poaching? And, you can fry it if you oil it first, then place it on top of a few veggies, or tomatoes and dill.
